I got the whole char (saibling) and tried to fillet it myself, but I really made a botch job of that. It tasted nice though, just dusted with seasoned flour and quickly fried. With risotto again.

Pan-fried Saibling filet

I dusted the saibling (char) filet with flour and fried it 5 minutes on each side, skin side last. Extremely good and very quick to prepare.
