Thai-style steamed fish

Following this BBC Recipe, but I used Sea Bream instead of Trout. It is described as "Thai-style", so probably not very authentic. Nevertheless, even with only garlic, ginger, chilli, lime and soy sauce, I was surprised to find how the aroma was immediately recognisable as "Thai" when I opened the foil packets. The fish was fantastic and I'm a big fan of bok choy.
Very quick and easy to prepare and really delicious.

Cheesey Shepherd's Pie

I made this with the leftover lamb from Sunday, put through the mincer.
Soften some onions and garlic in butter, add the mince and brown a little. Then add stock, worcester sauce and tomato purée. Mix and heat through, season and transfer to a baking dish. Top with potato mashed with butter, cream and grated cheese. Then put a little more grated cheese on the top. Bake for 30 minutes or so.
I can't remember the last time I had this, but I was amazed at how it tasted exactly as I remember.

Roast Lamb

This was a quite small piece of lamb and it cooked more quickly than I expected, so it wasn't quite as pink as it should have been. I should have followed my instinct instead of Jamie's cooking times. Also it got pretty cool while resting.
The chips tasted great but for some reason were not as crispy as they normally are. Maybe the fat wasn't hot enough?

No cooking today, but a selection of ham, salami and cheese for our supper. Strangely, we didn't manage to finish it all.

Chicken Dürüm

A turkish yufka bread filled with shredded grilled chicken thigh, caramelised onions and homemade lime pickle. A bit cross cultural and very tasty.

Fry-up

We were thinking of going out to eat but, at the last minute, decided to stay in. By change, the combination of food we happened to have on hand, made a lovely fry up. Very tasty with a couple of dark beers.

Slow-Cooked Shin of Beef

Try as I might I can't get slow cooked meat to come out the way it should. This was in the slow cooker for 5 or 6 hours, but the meat was still quite dry and tough.
The sauce with onions, mushrooms and red wine, was delicious, as were the chips.

Pasta and Meatballs

Meatballs made with a mix of pork and beef mince, a few breadcrumbs, onions, herbs and an egg. Following a suggestion on Quora I formed the balls and then put them in the fridge for a couple of hours before cooking, which definitely did seem to help them keep their round shape.
A sauce of tomatoes, onions and mushrooms.

Char filets

I got the whole char (saibling) and tried to fillet it myself, but I really made a botch job of that. It tasted nice though, just dusted with seasoned flour and quickly fried. With risotto again.

Oh dear, another 6 weeks since the last post. These next few entries are going to be a bit sketchy!
For example, this risotto looks like it has bacon and fennel. That's about all I can say.
