Pork Fillet with Green Peppercorn Sauce

Standard approach for the filet. Brown all over in a hot pan with a little lard, transfer the whole pan to a medium oven for 5 or 6 minutes, then allow the meat to rest for 5-10 minutes. Meanwhile fry a chopped shallot gently in butter, then add crushed peppercorns and brandy and reduce. Then add stock and reduce again. Then add cream and cook without boiling until the required thickness is reached.
Cook potatoes in their skins, cool and peel. Lightly fry them whole in a little oil with rosemary and salt.
Slice the meat and serve with the sauce poured over.
A lovely combination, although another spoonful of peppercorns and a bit more thickening of the sauce would have been even better.

Pasta with Bacon and Mushrooms

Soften onions and garlic, add bacon and fry, then add mushrooms and cook through. Add a little wine and reduce, then add cream and bubble until thickened. Season and sprinkle chopped parsley. Pretty simple but very nice.

Pasta with Mushroom Cream Sauce

For the pasta, head to your local italian deli and buy what fresh pasta they have! :)
For the sauce, brown a little bacon, add and soften onions and garlic, add mushrooms and cook for a couple of minutes, add diced tomato and cook for a minute or so, add cream and seasoning. Bubble gently until it is ready.

Pasta with bacon and tomato

Back from a weekend in Heidelberg we hadn't the energy to go out to eat, so I made pasta with what I could find in the fridge.
I browned some bacon very thinly sliced from a large piece, then added finely chopped onion and garlic and allowed them to soften. Then added quartered cherry tomatoes and cooked for 5 minutes, then lots of cream and allowed it to heat through. Seasoned with black pepper and a very small amount of nutmeg and ground chili. Garnished with some slices of tomato. Absolutely delicious!
